Chop the nuts in a food processor and then roast them for 9 minutes on 325c.
Line baking sheet with parchment paper.
Melt chocolate in microwave, checking often and stirring. Be carful not to get it to cooked just melted.
Add the cardamom and stir, then add the dried fruit and ¾ nuts and mix.
Spread the chocolate mixture onto the parchment paper and spread out into a wide rectangle, about ¼ inch thick.
Sprinkle remaining nuts and coffee beans onto the chocolate and press them in gently. Sprinkle with salt.
Cool in refrigerator for about 2 hours until hard. You can slide the chocolate onto a cutting board and cut into pieces. Keep refrigerated until serving.
I chopped the nuts in a food processor, just be carful so you don’t get nut flour. Enjoy this as I have so many times!
