A delicious light summery soup with fresh corn, for an easy get together.
Serves 4-6
INGREDIENTS
- 2 Tbsp. olive oil
- 1 big onion
- 4 cloves of garlic
- 3 celery stalks
- 2 carrots
- ½ of a white cabbage
- 2 ears of corn, (cut the corn off the cob before cooking)
- 1 16 ounce can northern white beans
- broth- enough to almost cover the vegetables
- 1-2 Tbsp. fresh dill
- 2 Tbsp. parsley
- salt to taste
- black pepper to taste
- hot sauce optional
INSTRUCTIONS
- Add olive oil to a pan, heat it up slowly
- Slice, dice and cut all the vegetables and add to pan, to sauté.
- Then add the broth and simmer until they reach their desired consistency. We like them al dente.
- Add the salt and herbs and hot sauce if you like.
- Enjoy with a good loaf of bread or a cracker
